Bruschetta



 "This is the best meal I've ever tasted," he said. "If anyone ever wanted to impress anyone, they should make them this meal." No word of a lie, these are the very words that came out of my man's mouth when I made him this punchy light lunch meal: tomato and basil bruschetta.

To be honest, you'd be hard pressed to find a meal more flavoursome but also easier to prepare (10 minutes, max!) than this, and it's also great if you've got a cold - what with the raw garlic, fresh basil and zingy red onions.

So without further ado, here's how I made it.

You'll need:
  1. One baguette
  2. four ripe tomatoes
  3. 1/4 of a red onion
  4. 2 garlic gloves
  5. a bunch of basil leaves (I used around four)
  6. olive oil



Finely chop the red onion, garlic and fresh basil and then place in a mixing bowl. Roughly dice the tomatoes and add to the mix, and finish by pouring a lid-full of olive oil on top.



Mix the ingredients together and let marinated while you slice your bread and then toast it.



As below, spoon the salsa ingredients onto the toast and then... bon apetit!




You may even like to make it a feast, and combine this Bruschetta recipe with a light salad or even the sauteed Shitake mushrooms we cooked here.
