Gingerbread Men and Women and other shapes

If you're short on money but rich in creativity, these Gingerbread Men and Biscuits will make a perfect Christmas gift for your friends and family. Who wouldn't fall in love with these homemade edible treats that have been lovingly hand-decorated?

Given that the mixture needs to be refrigerated for 2 hours, these Gingerbread Cookies take 3 hours to prepare and bake.

To make these adorable treats, you'll need:

  1. 3 cups of plain flour
  2. 1/2 tsp of salt
  3. 3/4 tsp of bicarb soda
  4. 2 tsp of ground ginger
  5. 1/4 tsp of ground cinnamon
  6. 1/4 tsp of ground cloves
  7. 1/2 cup of unsalted butter
  8. 1/2 cup of granulated white sugar
  9. 1 big egg
  10. 2/3 cup of molasses sugar
  11. 3 tbp of honey

Sift the flour, salt, bicarb soda, ginger, cinnamon, cloves and salt into a large bowl.

In a separate bowl beat the butter and sugar until it is light and fluffy, then add the egg, molasses and honey. Slowly stir step 1 ingredients into step 2 ingredients until you have made a thick and consistent dough.

Next, pull the dough apart into two equal halves, wrap in glad wrap and pop in the fridge for around two hours.

Once the dough is firm, preheat the oven to 150 degrees c. Cover a chopping board with flour and roll the dough out so it's roughly 1cm thick. Don't forget to flour your rolling pin also, as this will stop the dough from sticking to it. Use your cookie cutters to make some sweet shapes and then place these shapes on a baking tray that's been greased with butter.

Put in the oven for 5-10 minutes, depending on how big or small your cookies are. Then take out of the oven and let cool on a cooling tray. Once cooled down, it's decorating time.

The biscuits are now ready to eat! Store in a tin (and not in the fridge).
